Nourishing Chia Pudding for Pregnancy



Chia seed pudding is a tasty and healthy snack that's perfect for pregnancy! Not only is it packed with essential nutrients, but it's also quick and easy to make. In this recipe, created by Ottawa Prenatal Nutritionist Julia Davie, you will learn how to make a delicious and nutritious chia seed pudding that's safe and beneficial for both you and your growing baby.

Ingredients:

  • 1/2 cup chia seeds

  • 2 cups unsweetened almond milk (or other milk of choice)

  • 1 tablespoon honey or pure maple syrup

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon cinnamon

  • Fresh fruit, nuts, and/or coconut flakes for topping (optional)

Instructions:

  1. In a large mason jar, combine the chia seeds, almond milk, honey, vanilla extract, and cinnamon. Mix or shake well to combine.

  2. Place the lid on the jar and refrigerate for at least 2 hours or overnight. The chia seeds will absorb the liquid and thicken to create a pudding-like consistency.

  3. Once the pudding is set, give it a good stir to make sure there are no clumps of chia seeds.

  4. Divide the pudding into individual servings and top with your favorite fresh fruit, nuts, and/or coconut flakes. Some great topping options include sliced strawberries, blueberries, almonds, and shredded coconut.

  5. Serve and enjoy!
